Lemon chicken with stir-fried kale

Ingredients
- Wok:
- 1/2 red onion
- 1 clove of garlic
- 1 tomato
- 1 red pointed pepper
- Olive oil
- 200 grams of cut kale
- 100 grams of cannellini beans
- Lemon Chicken:
- Handful of fresh parsley
- 1 lemon
- Olive oil
- 1 garlic clove (crushed)
- Pepper and salt
- 75 grams of chicken fillet (cubed)
- Callowfit Fancy Garlic sauce
Preparation method
Chop the onion and chop the garlic. Cut the tomato and bell pepper into cubes. Heat some olive oil in a non-stick pan and fry the onion and garlic briefly. Then add the bell pepper and after 2 minutes the kale. Stir fry for 10 minutes over medium heat until al dente. In the last 4 minutes add the tomato and a splash of water if necessary.
Meanwhile, prepare the chicken as follows: finely chop parsley and grate the zest of a lemon over a bowl. Squeeze some juice from the lemon and add olive oil, garlic, parsley and salt and pepper. Stir in the chicken fillet cubes. Heat some oil in a pan and put on the stove. Bake the marinated chicken fillet until golden brown and al dente.
Rinse the cannellini beans and stir them in the stir-fried kale. Spoon the kale on a plate and serve the chicken fillet over it. Season with a dash of Callowfit Fancy Garlic sauce.
