Wrap pulled oats with Peri Peri style sauce

Ingredients

4 low-carb wraps, Box of pulled oats, Small bag of iceberg lettuce (100 grams), 2 carrots, 5 radishes, 1 avocado, Callowfit Peri Peri style sauce, 100 grams of fresh spinach, Handful of cherry tomatoes, 1 orange bell pepper, Olive oil, Pepper, salt,

Bereidingswijze

Preheat the oven to 180 degrees. Take 4 (round) bowls and 4 pieces of baking paper the size of the wraps. Place the wraps on the pieces of baking paper and press them together with the paper in the round bowl. The wrap and paper will automatically adapt to the bowl. Put these in the oven for about 15 minutes. The bowls are ready when they brown nicely on top (make sure they don't burn). When ready, take them out of the oven, bowl and all, and let the wraps cool down in the tin.

Heat some olive oil and fry the pulled oats with a dash of Callowfit Peri Peri style sauce (beware: this sauce is quite spicy). Season with salt and pepper.

Meanwhile, cut the radishes into small cubes, grate 2 carrots and halve the avocado and remove the stone.

Clean the bell pepper and tomatoes. Halve the tomatoes and cut the bell pepper into small cubes. Heat some olive oil in a pan and fry the bell pepper and tomato until tender. Add the fresh spinach in the last 2 minutes and let it shrink. Drain the stir-fry in a colander (if you don't do this, too much moisture will remain and your wrap will become soggy). Add the stir-fry to the pulled oats and cook for another minute.

Now take the wrap bowls and fill them with a layer of iceberg lettuce, some radish, carrot, a scoop of the stir fry and finish with half an avocado. You can possibly add some extra Peri Peri sauce on top.
