Stir-fried brussels sprouts with avocado, chicken and tomato.

2 tablespoons oil, 300 grams of minced chicken or vegetarian substitute, 1 clove of garlic or garlic powder, 1 red onion, 1 tablespoon of Provencal herbs, 400 grams of sprouts, 250 grams of cherry tomatoes, 1 avocado, 85 grams of arugula,

Bereidingswijze

Clean the sprouts and halve them. Also halve the cherry tomatoes. Set it aside.

Heat the oil in a non-frying pan and freeze the minced meat or meat substitute in 5 minutes.

Finely chop the garlic and onion and add it to the minced meat together with the herbs and sprouts. Season with salt and pepper if necessary.

Add the cherry tomatoes to the whole and fry for another 2 minutes. Meanwhile, cut an avocado in half and remove the seed. Scoop the halves of the avocado with a tablespoon and cut the halves into small cubes.

Remove the pan from the heat and add the avocado and arugula just before serving.

Optionally add some Callowfit Smokey BBQ sauce.
